I have made a lot of Salads on this channel and I have loved every one of them, but I think this Vegan Superfood Salad is our new favorite. I have decided to continue on with this way of filming and making a daily recipe video of what I eat in a day on a plant based diet. I really loved the buckwheat added into this recipe, I felt like it added some really nice flavor and texture along with nutrients that when combined with the other ingredients like the Chickpeas and Tofu became even better. I hope you guys try this Salad in your own time and I promise that it will not disappoint.

Ingredients:
1 Cup of Alfalfa Sprouts
1 cup of dice firm Tofu
1 cup diced organic beet
1/2 cup diced peppers
1 tsp of fresh cracked pepper
16 oz can of organic chickpeas
3 tbsp of apple cider vinegar
1/2 cup minced red onion
1 tbsp of olive oil
4 cups of chopped dandelion leaves or Romaine Lettuce
Salt to Taste
