Note: Some methods of poaching eggs call to add vinegar to water in a pot before brining to a simmer. This can help the egg whites firm up faster and prevent wispy strands when water is near boiling. However, by bringing water to a gentle simmer, we omit vinegar here, precluding a possible acidic taste on your eggs.
