You’ve seen recipes calling for a whole chicken cut up into pieces and probably thought to yourself, “there’s no way I can do that.” Well, there is a way—and surprise, surprise—it’s a lot easier than you think. What’s more, whole chickens are less expensive than buying a bird in parts, plus you get better quality and will have all the trimmings for making stock (not to mention, you’ll feel pretty accomplished to be own home butcher).
