Add everything to the crockpot and cook on low for 8 hours. Shred and use for tacos, bowls, or an easy protein all week.
POACHED SHREDDED CHICKEN (base for the enchiladas and the salad)
Just over 3 lbs chicken breast
Water
Salt, a heavy hand
Cover the chicken with well-salted water, bring to a boil, then cover and finish on low for 20 minutes. Shred in a stand mixer. One pot covers two meals.

A pinch of salt
354 g water
90 g organic 100% white grape juice
300 g frozen blueberries (fresh works too)
Whisk the dry ingredients, add the water and grape juice, and mix into a thick batter. Fold in the blueberries. Scoop into a lined muffin tin and bake at 375Β°F for about 20 minutes, until set. Gluten free, dairy free, egg free.

FALL HARVEST CHICKEN SALAD WITH MAPLE TAHINI DRESSING
Roasted vegetables:
Sweet potatoes, peeled and chopped
2 baby butternut squash, halved
Olive oil or avocado oil spray
Chili powder, paprika, garlic powder, onion powder, salt and pepper
Toss the sweet potatoes with olive oil and the seasonings. Spray the squash with avocado oil and salt. Roast at 400Β°F until tender, about 25 minutes. Chop the squash.
Salad:
Shredded chicken (from recipe 2)
Arugula
Cannellini beans
Dried cranberries
Apple, chopped
Roasted sweet potato and butternut squash
Maple tahini dressing (adapted from Downshiftology, doubled):
1/2 cup tahini
2/3 cup water
2 Tbsp maple syrup
Juice of 2 lemons
2 garlic cloves, minced
Salt and pepper, to taste
Whisk the dressing until it pours. Makes about 1 1/3 cups, keeps a week in the fridge. Toss the salad, dress at serving, and finish with a drizzle of balsamic vinegar or glaze. Trust me on the balsamic.
